Characteristics of the vintage
After a cold winter, spring arrived early. It was followed by a cool and rainy May, a hot June and quite changeable weather in July and August. This has resulted in an early ripening and very early harvest for dry wines.
Pale yellow colour. The nose features aromas of white fruits like peachand ripe summer apple together with finely tuned oak. The palate is harmonious, with very fresh acidity, structured but also nicely textured. The finish is clean, focused with some saltiness.
75% Furmint, 25% Hárslevelű
The Furmint grapes were pressed directly. The majority of Hárslevelű grapes was destemmed and had a few hours of skin contact before pressing. A tailored vinification for each lot, by experimenting different selected yeasts and natural fermentation. Fermentation in barrels of 225-and 500-litres, which were 2 to 5 years old. In some barrels malolactic fermentation occurred spontaneously.
Aged in the same type of oak as used for the fermentation for 6 months, we blended the wine at the end of December 2019, then it continued its ageing in tank until bottling in August 2020.
Very selective manual harvest plot by plot of fully ripened, healthy bunches between the 16th and 19th of September in small boxes of 20 kg (44 lbs).

Disznókő Tokaji Dry Inspiration 2019 can be served as an aperitif, with seafood as well as with poultry, game birds, pork, or veal. Serve cool (10 °C). Drink now or cellar it for 2-3 years.
